Cranberry Orange Loaf
One of my favorite things to make around this time of year is Cranberry Orange Loaf. Just the right amount of sweet with a little bit of tart. Soooo yum as a snack or even a meal. (I like to warm it up and crumble it over some greek yogurt... so delish!) This is a recipe I’ve been playing with for a long time… Give it a try!
Recipe:
2 cups Kodiak Cake Whole Wheat Oat and Honey Mix
1 cup coconut sugar
1 tsp baking powder
1/2 tsp baking soda
1 cup greek yogurt (I used Nounos whole milk greek yogurt)
1 egg
1 cup fresh cranberries
2/3 cup orange juice
1 tsp vanilla extract
1 Tbsp walnut oil
1/4 cup walnuts (optional)
Directions:
- Mix dry ingredients together
- Mix wet ingredients together
- Fold the wet ingredients into the dry ingredients
- Preheat convection oven to 360 degrees F (if not convection oven preheat regular oven to 385 degrees F)
- Spray a 1.5 quart glass pyrex loaf pan with non stick spray (i.e. avocado oil spray, coconut oil spray, etc)
- Pour mixture into loaf pan
- Bake for ~40 minutes at 360 degrees F (if not convection oven preheat regular oven to 385 degrees F). **I recommend checking at around 30 minutes, each oven is slightly different.**
- Let cool
- Cut into 8-10 slices
- ENJOY!!!!
