Caprese Salad Meal Prep


Meal Prep.... a little late this week, but still getting it done.
This caprese salad will be paired with arugula and Italian seasoned shrimp for lunch. So easy to prep! I made it while the shrimp was in the air fryer 😉!

Ingredients:
160g fresh mozzarella balls (small or medium size)
2 pints mini mixers tomatoes (or whatever small tomatoes you enjoy)
1/4 cup Fresh Basil

Directions:
1. Cut tomatoes in halves
2. If using medium size fresh mozzarella balls, cut to quarters
3. Chop about 1/4 cup fresh basil
4. Mix together in container and refrigerate
5. Portion out as needed for meals

Makes 4-5 servings (about 1/2 cup per serving)

I don’t add dressing, until I’m ready to eat, but this is a personal preference. You can add dressing to your salad as you prep it, then it will marinade in the dressing flavors overnight.
